Classification of carbonation
In Denmark, there is no classification of the carbon dioxide content in water, but in Germany there are. Likewise, the Fine Waters Society has also classified the co2 content, which can be seen below. In the “The flavor of water” section and the “Carbonation” sub-section, you can read about how carbonic acid makes the water more acidic and influences the mouthfeel, which is an important part of the overall taste experience.

Fine Waters Society
The Fine Waters Society, whose classification is mentioned above, is an international association based in the United States. The purpose of the association is to promote knowledge and interest in fine waters. Their classification is the one that will be used when referring to the co2 content on the following pages.
